Asparagus as an dessert

Asparagus mousse

ingredients for 4 persons

  •     1 Kg asparagus
  •     1 tbsp butter
  •     1 teaspoon sugar
  •     10 sheets of white gelatin
  •     350 ml asparagus soup
  •     4 tbsp fresh cheese
  •     300 ml of cream
  •     Salt, white pepper


Making asparagus:
Wash the asparagus, peel and cut into 1 cm long pieces.
Then cook asparagus in water with 1 tbsp butter, a pinch of salt and sugar for about 7 minutes.
Asparagus with a foam spoon from the asparagus water lift and drain well.

Soak the gelatine in cold water.
350 ml of the asparagus soup and cool the fresh cheese with the snowbuck in it.
Season with salt and pepper and add the asparagus pieces.
Heat some of the remaining asparagus soup, express the gelatin, dissolve, and gently remove the asparagus cheese mixture
Stir it.
Whip the cream stiffly and evenly. Put the mousse in the refrigerator overnight.
