Asparagus strawberry salad
Sweet asparagus and strawberry salad
- 300g white asparagus
- 300g strawberries
- 2 limes
- 80g Brown sugar
- 1 vanilla dish
- 150g whipped cream
- 50g cream fraîche
- 30g almond leaves (roasted)
Peel the asparagus and cook with a little sugar for about 10 minutes.
Drain under running cold water and allow to dry on a kitchen towel.
Wash, clean and halve the strawberries.
Almond flakes in a coated pan without oil golden brown to roast, at side positions.
Squeeze out the lime and boil with the marrow of the vanilla shake and sugar and 50 ml of water to a syrup.
Cut the asparagus into small oblique pieces of approx. 2-3 cm and mix with the strawberries in a bowl.
Allow the syrup to cool.
Whip the cream half-stiff and place under the cream fraîche.
Spread the lettuce into the glasses, add the cream and garnish with roasted almond flakes.
If you like, you can still marinate the strawberries and asparagus pieces with some Grand Marnier.
