Our Hollandaise sauce
hollandaise sauce
ingredients
- 2 egg yolks
- 1 tablespoon lemon juice
- 1 teaspoon mustard (Dijon)
- 1 tbsp crème fraîche
- 1 teaspoon sugar
- 150g butter
- Salt pepper
Instructions
Put the egg yolks with lemon juice, mustard, some salt, sugar and crème fraiche in a high container and smooth with a slice.
Now boil the butter briefly, slowly into the vessel and run the cutting bar.
Season with salt and pepper.
Without mustard, the recipe also gives a great Sauce Hollandaise.
